Matrix Powder Steel.

The next generation steel for professional cutting tools.

Harder, stronger, more stable — matrix powder steel is the perfect steel for high-performance knives. In a past where high carbon steel was the industry standard for premium knives, powder steel does everything high carbon does — without sacrificing hardness or sharpness in the name of stability.

With a hardness of HRC60+ and uncompromising yield strength similar to Böhler M390 steel or SG2 steel, our matrix powder steel is the key to superior sharpness, wear resistance, and takes after handmade Japanese knives — but without the high-maintenance drawbacks.

Other than its balance of hardness and toughness, matrix powder steel’s unique makeup makes it possible to engineer an ultra-thin blade at an extremely acute angle — the key to an ultra-sharp knife. Like Japanese artisan knives, our ultra-thin blades have a 13° bevel to ensure smooth, clean cuts every time.

When tested by CATRA — the gold standard for sharpness and edge-retention testing — our 8” Chef’s Knife scored 50% above the highest sharpness standard, and 116% above the highest durability standard.

High performance, low maintenance.

All the benefits of a pro knife, without the high-maintenance worry. Our knives are more versatile and durable than professional high-carbon knives — which require specific maintenance — thanks to our steel’s superior strength and corrosion resistance. Slice through lemons, chop through hard veggies, and never worry about rust or chippin.

Precision engineering meets master craftmanship

At less than one-third of the cost of an artisanal Japanese knife, we can bring the full potential of matrix powder steel to your kitchen.

Each and every Hast knife is precisely hand sharpened to the correct angle by a specially trained knife master with decades of experience — so you’ll always get a knife that performs at the highest level.

Form For Function

Our Japanese standard blade edges can stay sharp without professional sharpening. To make your cooking truly carefree, our ceramic honing rod was specially designed for Hast knives — so you can restore your knives to peak sharpness from home.
